My schedule has gotten a lot busier lately. I’ve been watching kids a few days a week, I’ve started working in the childcare center of a gym I want to join (can we say barter membership?!), and I’ve been working hard to declutter the house for what is probably the 9th time in the last 12 months. I’ve also been trying to keep our food costs down, so between trying to save time and money our meals have been pretty simple.

I can’t even tell you how many salads that look almost exactly like this I’ve had this week. The Walmart near me still price matches, so it’s basically a spinach base, onion, leftover protein or eggs, and whatever veggies were cheapest to price match. So far I’ve been able to find avocado super cheap almost every week (like 5/$1!!) so I’ve been keeping the fridge stocked.

Fry’s was having a ridiculous sale on strawberries this week, so a few of my salads got special treatment. Especially when it’s been 90 degrees all week, I LOVE fruit in my salad!

My other easy meal staple. Micah has really gotten into eating burgers lately, and since that’s actually real food and not chicken nuggets I’m happy to oblige! His burger gets cheese and ketchup, mine gets wrapped in a salad. 😛

Of course, what would a burger be with out sweet potato fries? I tried to sneak in some asparagus, but wound up with chewed asparagus spit onto my plate. Someday they’ll learn to like green stuff…

I try to keep salmon in the freezer so I can throw this together for lunch once a week or so. I just marinated the salmon in garlic and honey, and while I was making the kids lunch I threw everything in the oven. It took less than 15 minutes and it was so yummy!

It’s a little warm for soup right now, but it was one of those days where it was crockpot or bust — and by that I mean crockpot or bringing home pizza. I don’t generally eat corn or beans, but Danny really loves Mexican food so I decided not to mess with the recipe. Micah refused to eat a single bite but Jonah loved it, so I guess that’s half a win.

I’m not sure why, but this week I’ve really been craving bread, cookies, and pretty much every other carb bomb out there. I’ve been making a lot of homemade bread for the kids, so that probably has something to do with it. Instead of eating an entire loaf of that and feeling awful, I decided to splurge and make some gluten-free chocolate chip cookies. They were a little crumbly (as most gluten free treats are) but they really hit the spot! I also wound up making some gluten free biscuits, which were so heavenly that I forgot to take a picture lol.

I generally try not to use gluten-free supplements and just stick to things that are naturally gluten free for a lot of reasons. Most gluten free substitutes skyrocket blood sugar and contain more carbs that I usually eat in a day, and I try to avoid anything processed in general. It was still nice as a treat though, and now that I’ve had my little carb fest I don’t have the urge to make any more. Sometimes balance is eating a cookie now so you don’t snap and eat 20 in a week…
