Since we were all sick this week I haven’t had a ton of interesting food to post, but I have this week’s menu and I’m excited to be back to interesting meals again.

I got up early enough to make some eggs with red onion and sweet potato, and it was super yummy. I’m on a serious sweet potato kick right now, and I’m loving them paired with eggs. I’m excited for fall menus — roasting veggies just sound amazing right now!

I tried to keep things a little simpler this week and stay away from the more exotic choices, because I discovered that my hubby is not a fan of polenta, spaghetti squash (although he didn’t mind it nearly as much as the polenta), or the frozen shrimp that was on sale last week (I know, I should never have bought cheap seafood).

It’s hopefully going to be a low key night. I have to run to the store and to pickup our CSA order, get some homework done, and get in bed pretty early so I can finally kick this cold. Dinner has been in the crockpot all day and it should be ready soon — super excited about it!
